Ichiran Ramen ( 一蘭ラーメン) is a popular ramen chain especially among tourists.
Ichiran Ramen serves Tonkotsu-base Ramen (豚骨ラーメン), which originated in Fukuoka (福岡).
During my recent visit to Tokyo, I had my accommodation in the Shinjuku Area.
Every night, when I walked passed this outlet near the Shinjuku Station, there would be a long queue, dominated by mostly tourists.
So one fine day, I decided to check out Ichiran in the morning.
Like most ramen shops in Japan, you will need to get a Ramen ticket from a vending machine.
Next, find a seat. There's a seating chart near the entrance to show you how many seats are vacant (空).
Once you get seated, each seat is divided by a partition.
You'll be greeted by a staff behind the shutter, and you will not be able to see his/her face.
Pass the tickets to the staff and then you'll get a preference/ customization sheet. Next, press the button to call the staff and the ramen will be prepared according to your preference.
Next, you will be serve will a bowl of tonkotsu ramen.
The hot broth was comforting especially when the weather is cold. Broth was thick, noodles were cooked al dente and chashu (チャーシュー) was flavourful.
Definitely one of best ramen I had !
